Rethink dining out.

The Herald  Sun compares Greenhouse by Joost to DORIS Lessing’s 1982 science-fiction novel, The Making of The Representative for Planet 8, a world and its people are dying in a new Ice Age. As they succumb to starvation and cold, the essence of their being is distilled into a single representative, who lives on.

Our eco-friendly “pop-up” restaurant reminds them of the challenges to rethink dining out.

  • What would the restaurant representative look like? Something made from foams, pork belly, panna cotta, pizza and Italian mineral water, which swears like Gordon Ramsay?
  • Is Greenhouse an art installation; a novelty; a new Jerusalem; a philosophical challenge; or an ephemeral, ecological trend surfer, or all of the above?

At Greenhouse by Joost we like to be thought of as challenging as well as be challenged.
